Ratatouille

 

It’s only right for my first recipe shared to be Ratatouille! I had so much fun making this dish, it was SUPER easy and extremely affordable :)

Ratatouille

Prep Time: 15 minutes   Cook Time: 1 hour

Ingredients:                                                                                   

*One medium eggplant (sliced 1/4 in thick)

*One medium Zucchini  (sliced 1/4 in thick)                           

*Three Roma Tomatoes  (sliced 1/4 in thick)

*One medium Onion (chopped)

*One Bell Pepper (diced)

*Four garlic cloves (minced)

*One 14 oz can Diced Tomatoes 

*Three tbsp Olive Oil

*One tsp Salt

*Italian Seasoning + any other seasonings of your choice:)

Directions

      *Sauté the onion and bell peppers for the sauce in a large oiled skillet over medium-high heat. Sauté the chopped onion and bell pepper until soft. Add your garlic and sauté for another minute,add the canned tomatoes, salt, and half of your seasoning

    *Simmer sauce for 10 minutes, transfer to a blender or food processor and blend until it’s smooth.

    *To assemble the final dish pour the sauce into an ll-inch skillet or pan, then arrange the sliced veggies in a spiral, place the sliced vegetables either in a pattern or just as you wish :) top the veggies with a drizzle of oil and the rest of the Italian seasoning. Lastly, to bake the ratatouille cover the pan and bake in a 375°F oven for 30 minutes. Remove the lid, then bake for another 15-30 minutes. Let cool a few minutes and enjoy! 

Notes: Even with a name like ratatouille it is a very simple dish enough for busy schedules! Just slice up the veggies, make the sauce, assemble everything in the pan & bake! Works as a main dish (pairs well with salad, pasta & red wine) or as a side dish.
